On a 2015 Toyota Corolla LE (non-push-to-start) is there a benefit of using THAR-ONE-TOY8 over THAR-ONE-TOY3?

Yes the TOY 8 is a combination of a TOY3 harness and another one. TOY3 gets half the job done, TOY8 gets it all done !

Could you give a bit more info? The product finder lists both harnesses as options for this car. Why would they suggest a harness that will not allow for a complete install? What will be missing with the TOY3?
You can check the TOY3 installation guide tu see what wire will need to be connected.

THAR-ONE-TOY8 is a bundle which contains the THAR-ONE-TOY3 and the THAR-ONE-TOY10. TOY3 is a T-harness which plugs into the ignition switch connector on the steering column. It also supplies +12V and ground to the module. TOY10 is a T-harness which connects to CANbus, immobiliser data and power door lock data. That makes two sets of T connections; one to the OBD II diagnostic connector, one to a 30-pin connector which is on the bottom of the body control module, at the back, sitting under the fuse box (which, in the Corolla, is on the bottom of the BCM facing the floor - so that you pretty much have to be on the floor staring up to see it). Even with the TOY8, you may still need to individually wire connections for the horn, the trunk release, and/or the pin switches for the hood/doors/trunk - especially if any of these are aftermarket items. The TOY8/TOY10 should grab enough of the data lines to control the immobiliser, the power door locks, the parking lights, and monitor the brake pedal. The difference might be about four wires (CAN+, CAN-, immo data, power lock data) but the TOY10 does make it easier to debug a new install as, if it's not communicating for some reason, you can at least eliminate one possible cause - as you know your data wiring is factory-correct.
